These traditional presses are used to squeeze the olives and extract the oils.

The olive oil factory also had this more modern machine, which can produce more olive oil with fewer workers.

After our tour they provided us with this delicious spread to sample their wares.

After the olive farm, we visited a small winery called Carinae. It was founded by a French couple as a restirement project. He had worked as an electrical engineer in Mendoza in the late 1990s, and instead of returning to France, they bought some land and settled down in Argentina.
